Watermelons are sweet and juicy fruits that contain about 92% water. They are extremely hydrating, making them ideal for serving during the dog days of summer. Whether slicing watermelons into handheld portions for snacking or adding chunks to a salad, watermelons are undeniably refreshing, tasty, and healthy. These favorite fruits are packed with nutrients such as vitamins A and C. They also contain lycopene which may help reduce the risk of certain diseases. Feta cheese pairs well with watermelon as the salty and creamy texture complements the sweetness. If you have never tried this combination before, here’s your chance!
Easy watermelon and feta salad recipe
Serves 6
Ingredients:
Salad base:
- 8 cups arugula
- ¼ cup loosely packed torn fresh mint leaves
- 2 cups thinly sliced seedless English cucumbers
- 1 small red onion, thinly sliced
Toppings: (Reserve these to top the salad)
- 3 cups seedless watermelon chunks (no rind)
- ¼ cup crumbled feta cheese
Salad directions:
In a large bowl, gently toss together the arugula, mint, cucumbers and onion. Reserve the toppings. Set salad base aside to prepare the dressing.
Lemon, avocado oil, and honey salad dressing:
- Freshly grated lemon zest from two medium-size lemons (about 2 teaspoons)
- Lemon juice from one medium-size lemon (about 2 to 3 tablespoons juice)
- 4 Tablespoons avocado oil
- 1 teaspoon pure honey
- 1/8 teaspoon freshly ground black pepper
Dressing directions:
In a small bowl, whisk together the salad dressing ingredients.
To assemble the salad: Drizzle the desired amount of dressing over the salad base. (Add a little at a time and taste as you go.) Gently toss to combine. Serve on individual plates and top with equal portions of watermelon and feta cheese. Serve immediately.
