Apple, Brie & Walnut Salad

¼ cup mayonnaise
¼ cup of pure maple syrup
3 Tbs. Champagne vinegar
1 tsp. sugar
½ tsp. salt
¼ tsp. pepper
½ cup vegetable oil

1 – 10 oz. package mixed baby greens
2 apples – quartered, cored and sliced
¾ cup glazed walnuts
8 oz. brie cheese – cubed and chilled

To prepare the dressing, blend mayonnaise, maple syrup, vinegar, sugar, salt and pepper. Gradually whisk in oil until the mixture is blended and slightly thickened. Cover and refrigerate.

Just prior to serving, combine greens, apple slices, walnuts and cheese. Toss with enough dressing to coat. Serves 8 – 10.
