Family members dropping by unexpectedly, a friend visiting from out-of-state, your neighbor stopping over to say hello – these are all real-life scenarios that are happening more often now that people are getting out and socializing more often! Don’t get caught unprepared. Be a gracious host and serve these easy-to-prepare delicious two-ingredient appetizer recipes:

1) Brie cheese with apricot glaze – Take a large wheel of brie cheese (8 oz. or slightly larger), cut the white rind off the top of the cheese only, place on a baking dish covered with non-stick foil for easy clean-up. Top cheese with ¾ jar of apricot jam (from an 18 oz. jar). Bake in the oven at 350 degrees F for 13-15 minutes or until cheese is hot and bubbly, and melty. Serve warm with crackers or apple wedges. Classy!

2) Sour cream onion dip – Take a small 8 oz. container of your favorite sour cream. Mix with one dry pouch of Lipton onion soup mix. (They come two per 1.9 oz. box.) Place mixture back into the sour cream container. (Or, for more dip, use one large 16 oz. container and two packages of dry onion soup mix.) Cover and place in the fridge. Onion dip keeps in fridge cold for up to three days. Serve with cut-up veggies like carrots and celery, or serve as a dip with potato chips. Yum!

3) Frozen strawberry sorbet – Hull* one pound of washed strawberries. Cut the berries in half. Place on wax or parchment paper and freeze until hardened, about one to four hours. Then, place the frozen strawberries into a food processor. Add ¼ cup of your favorite honey and blend just until mixed. Transfer mixture to a glass loaf dish. Smooth out and cover. Place berries back in the freezer until completely refrozen, about an hour or so. Use an ice cream scoop to serve individual portions. Enjoy!

*To hull strawberry, angle a small knife and cut away the green leafy top of the strawberry while going in a circular motion. Remove the hull and discard.
