Sausage Egg Bake

Serves 6

Ingredients:

  • 1 Tbsp. olive oil
  • 1/3 cup onion, finely chopped
  • 8 oz. mild ground low-fat pork sausage crumbles 
  • ¼ cup diced smoked ham
  • ¾ cup packed spinach (frozen, defrosted, excess liquid removed)
  • 1 cup shredded mozzarella cheese (about 4 oz.)
  • 2 cups milk
  • 1 cup Heart Smart Bisquick
  • 4 eggs
  • ½ tsp. ground thyme
  • ½ tsp. salt
  • ¼ tsp. ground black pepper

Directions:

Preheat oven to 400 degrees F. Lightly grease a 9 x 13-inch baking dish with cooking spray. In a sauté pan, heat the olive oil over medium heat. Add the onion, sausage crumbles and smoked ham. Cook over medium heat, stirring occasionally, until crumbles are lightly browned and cooked through. Add the meat mixture to the baking dish and spread out. Evenly top meat mixture with spinach and cheese. In a bowl, combine the milk, Bisquick mix, and eggs. Whisk until blended smooth. Evenly pour wet egg mixture over the ingredients in the baking dish. Sprinkle evenly with ground thyme, salt, and ground black pepper. Bake in a 400-degree oven for 35 minutes until center is cooked through and set. Let sit for 10 minutes before slicing and serving.

Top tips:

  • For breakfast, serve alongside fresh fruit. For lunch or dinner, best served with a side salad. 
  • For a vegetarian dish – use plant-based vegetarian sausage crumbles in place of meat.
  • Leftovers can be covered, stored in the refrigerator, and reheated in the microwave.

  • An eggshell can contain as many as 17,000 pores.
  • Breed determines the color of the eggshell.  
  • Though white and brown are traditional, some  eggshells can be blue, green, or pink.
  • The word “yoke” comes from the Old English word for “yellow.”
  • Egg yolks naturally contain Vitamin D.  
  • Iowa leads the nation in egg production.
  • Spin an egg to determine the difference between cooked and raw. Raw eggs wobble and hard cooked spin more easily.
