Red & Green Holiday Chicken Salad

Serves 8

Main ingredients:

  • 3 cups shredded rotisserie chicken
  • ½ cup red grapes quartered
  • ½ cup green grapes quartered
  • ¼ cup thinly sliced green onions
  • ½  cup diced celery

Optional: ½ cup chopped pecans

Dressing:

  • 1 cup mayonnaise
  • Juice from ½ lemon
  • 1 Tbsp. golden mustard
  • Salt & pepper to taste

In a medium bowl, combine the main ingredients. In a separate bowl, mix the dressing ingredients until creamy. Toss over the chicken mixture to evenly distribute. Taste and add more salt or pepper if needed. Refrigerate, covered, for up to three days. Serve with your favorite rolls or bread or scoop a heaping on top of a bed of lettuce.
