Looking for an easy to prepare and healthy bowl of soup? Look no further! Enjoy our healthy minestrone soup recipe that is chock full of fresh vegetables.
Soup ingredients:
- 4 Tablespoons olive oil
- 4 cloves garlic, minced
- 1 medium yellow onion, chopped
- 1 ½ cups chopped celery
- 2 cups chopped carrots
- 6 cups low-salt chicken or vegetable broth
- 2 cups canned fire roasted diced tomatoes
- 2 cups chopped zucchini
- 2 cups chopped green beans
- 2 cups baby spinach leaves
- 1 cup canned white beans, drained
- 2 Tablespoons Italian seasoning
- 1 teaspoon sea salt
- 1 teaspoon cracked black pepper
- Parmesan cheese (for topping)
Directions:
In a large pot over medium heat, sauté the olive oil, garlic, onion, celery and carrots for 8 to 10 minutes, stirring frequently. Add the chicken broth and fire roasted diced tomatoes and bring to a boil. Reduce heat to low and add the zucchini and green beans. Simmer, partially covered, on low for 45 minutes. Add the spinach, white beans, and seasonings. Continue to simmer for another half hour until heated through. Serve with fresh grated Parmesan cheese. I made the minestrone yesterday and we loved it! Easy to make and delicious to eat! I used vegetable bouillon so it was vegan.
