Recipe for Low-salt chicken noodle soup
Serves 8
Ingredients:
- 3 Tablespoons good quality olive oil
- 1 sweet onion, finely diced
- 4 carrots, diced
- 2 stalks celery, diced
- 2 cartons (8 cups) low or no-salt chicken broth, store-bought or homemade
- 2 cups cooked chicken meat, diced* (see note below)
- ½ teaspoon ground thyme
- ¼ teaspoon ground sage
- Cracked black pepper, to taste
- 12 oz. of your favorite sturdy soup noodles (optional)
Directions:
Prepare noodles per package directions until al-dente. Drain and set aside. In a large soup pot, heat the olive oil on low heat. Add the diced onion and sauté for up to five minutes until onions are translucent. Add the diced carrots and celery. Sauté for another five minutes. Add the low or no-salt chicken broth, the cooked chicken, and the spices. Bring to a boil. Then, reduce heat to a simmer. Simmer soup for 30 minutes. To serve, add some noodles to each soup bowl. Ladle hot soup over noodles. Serve immediately.
*Store-bought rotisserie chicken can contain salt – so it may be best to cook your own meat.
Useful tips: Note that the addition of egg noodles to this recipe is totally optional. The amount of chicken broth and chicken can also be slightly varied in this recipe depending upon the desired broth/chicken ratio.
