Tasty Tarragon & Chive Green Salad

Serves 8 Ingredients:

  • ¼ cup olive oil
  • 4 teaspoons fresh lemon juice
  • ½ teaspoon Dijon mustard
  • Coarse salt and cracked black pepper
  • ½ cup grape tomatoes
  • 2 heads Bibb lettuce, torn into bite-size pieces
  • ¼ cup each fresh tarragon and chives

Directions: In a small bowl, whisk together the olive oil, fresh lemon juice, and the mustard. Season with salt and cracked black pepper to taste. In a large bowl, combine the tomatoes, lettuce, and fresh herbs. Slowly add some dressing and gently toss to combine. Serve immediately.

Chef’s notes & acceptable substitutes:

About tarragon: Tarragon is a bushy and highly aromatic herb that adds piquancy (tang) to culinary dishes. Tarragon offers a subtle anise (licorice) flavor. Many chefs use this herb in omelets and stews. While tarragon is generally enjoyed by the masses, some people dislike the flavor. If you’re on team anti-tarragon, simply substitute the herb in this recipe with dill. About chives: Chives are relatives of onions, garlic, shallots, leeks, and scallions. As expected, this tasty herb has a mild onion-y flavor. Their mildness makes chives a great addition to soups, omelets, and potato dishes. Heat can break down their delicate flavor, so to gain full flavor, it’s best to add them toward the recipe’s end. Chives can be substituted with scallions in this recipe if preferred. About bibb lettuce: Bibb lettuce is a variety of butter lettuce. It may be called limestone lettuce or Boston bibb. This delicate lettuce is lighter than romaine and has a mild flavor. The leaves are very tender, so it makes sense that it’s in the “butter” lettuce family. Prefer a sturdier lettuce? Use romaine lettuce instead. About grape tomatoes: Grape tomatoes are small bite-sized shaped tomatoes. They tend to be oblong and half the size of a cherry tomato. While they aren’t as sweet as cherry tomatoes, they have a meatier flesh and possess a sturdier and less watery consistency.
