This layered turkey casserole is ideal for leftover Thanksgiving or Christmas dinner. Note that we offer substitution options for leftovers …just in case you don’t have any left…
Ingredients:
- 6 Tablespoons butter, divided
- About 2 cups of leftover cooked turkey (cut into bite-size pieces) or shredded meat from one rotisserie chicken
- About 2 cups of leftover cooked mashed potatoes and/or stuffing and/or sweet potatoes (or a combo)
- About 2 cups leftover turkey gravy or prepared chicken or turkey gravy
- About 2 cups of leftover cooked vegetables (Examples: corn, carrots, peas, green beans broccoli, or a combo) or a 10 oz. frozen bag of mixed vegetables, defrosted
- 1 (8oz.) bag of shredded cheddar cheese
- Leftover cranberry sauce (Optional for serving on the side)
Instructions:
Preheat oven to 350 degrees F. Grease at 9 x 13” baking dish with 2 T. butter. Combine the leftover meat, leftover vegetables, 1 ½ cups of gravy, and ½ bag (4 oz.) of cheese. Spread the mixture flat in the greased baking dish. Completely and evenly top the meat mixture with the leftover stuffing or mashed potatoes or sweet potatoes (or top half with one and half with another). Top with remaining ½ cup gravy and the rest of the cheese. Dot top with remaining 4 T. butter. Cover casserole with foil. Heat in oven until cooked through, up to 45 about minutes or until hot. (Check it after a half hour cooking time and thereafter.) Toward the end of the cooking time, remove foil and cook until cheese is lightly golden if needed. Serve hot with leftover cranberry sauce to enjoy this layered turkey casserole!
