Two Top Tasty Super Bowl LVII Appetizers That Can Be Prepared Lickety-Split

These may be prepared one-hour ahead of time, kept cool, and then served

Winning bean dip (Serves 6)

Ingredients

  • 2 (15 oz.) cans cannellini beans, rinsed, drained, and patted dry
  • 1 small shallot, finely chopped
  • 1 garlic clove, minced
  • ¼ cup chopped fresh cilantro
  • ¼ cup chopped fresh mint
  • 2 Tablespoon fresh squeezed lemon juice
  • 3 Tablespoons high quality olive oil
  • ¼ teaspoon Kosher salt
  • ¼ teaspoon cracked black pepper

In a food processor, puree all ingredients until smooth. Transfer to a serving bowl and chill for one hour to allow flavors to combine. Serve with crudites.

Recipe tip:  No cannellini beans? Sub with your favorite white beans such as Great Northern or navy.

Touchdown Balsamic Tomatoes & Mozzarella (Serves 6)

Ingredients:

  • 4 fresh ripe tomatoes, sliced ¼ inch thick
  • 2 large fresh mozzarella balls, sliced ¼ inch thick
  • High quality Italian olive oil
  • Balsamic glaze* (for drizzling)
  • Garlic granules (to taste)
  • Sea salt (to taste)
  • Rainbow Peppercorn,** ground (to taste)
  • Two large handfuls of fresh basil leaves

On a serving platter, alternate and overlap tomato slices, basil leaves, and mozzarella slices. Drizzle olive oil over the top of the platter, followed by some of the glaze. Note that some glazes can be strong so be sure to use minimal amounts. Sprinkle lightly and evenly with garlic granules, sea salt, and ground peppercorns. Garnish with remaining basil leaves.

*Balsamic glaze can be made at home using a good quality balsamic vinegar. Simply simmer some in a small saucepan over low heat for about 20 to 30 minutes until it reduces and creates a glaze. Do watch it carefully, stir often, and take care not to burn.

**Rainbow peppercorn is a mixture of black, white, pink, and green peppercorns. If not available, sub with cracked black pepper or regular black or white pepper.

Recipe tip: If basil is too expensive or unavailable, or you are simply not a fan, sub with fresh spinach leaves instead.
