Zucchini Bread

  • 3 eggs
  • 2 cups sugar
  • 1 cup vegetable oil
  • 2 cups peeled, shredded raw zucchini
  • 3 tsp. vanilla
  • 3 cups all purpose flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • ¼ tsp. baking powder
  • 3 tsp. cinnamon
  • 1 cup walnuts – coarsely chopped

What to do:

Preheat oven to 350 degrees. Beat eggs until light and foamy. Add sugar, oil, zucchini and vanilla. Mix well. Combine flour, salt, baking soda, baking powder and cinnamon in a separate bowl. Stir dry ingredients into egg mixture until well combined. Add nuts. Pour into 2 greased loaf pans. Bake for 1 hour or until a toothpick inserted in the center comes out clean. Cool on rack.
