3 Tbs. Dijon mustard
2 cups shredded mozzarella cheese
5 Roma tomatoes – sliced
1 ½ tsp. minced garlic
Preheat oven to 375 degrees. Fit the crust into the pie plate, and flute the edge. Prick the bottom and sides of the crust with a fork. Bake for 10 minutes. Remove from oven. Brush crust with Dijon mustard. Place the mozzarella cheese in the bottom of the crust. Top with tomato slices. Sprinkle with garlic and oregano. Return pie to the oven and bake for 30 minutes. Sprinkle with Parmesan cheese and bake for an additional 10 minutes, or until golden.
