Roast Pork with Mustard, Sage & Maple Glaze

1 medium onion – diced

4 cloves of garlic – chopped

1/3 cup of coarsely chopped fresh sage

½ cup Dijon mustard

½ cup pure maple syrup (not imitation)

1 Tbs. soy sauce

¼ tsp. salt

Pinch of pepper


3 lb. boneless pork loin roast

salt & pepper


Prepare glaze: Heat oil in a small pan over medium heat. Add onion & garlic and cook, stirring frequently, until softened – about 5 minutes. Cool slightly. Combine onion / garlic mixture, sage, mustard, maple syrup, soy sauce, salt and pepper in a blender and puree until smooth. Set aside.


Preheat oven to 450 degrees. Season pork with salt and pepper and allow to sit at room temperature while oven preheats. Roast pork in the center of the oven for 30 minutes. Cover the pork with prepared glaze. Reduce oven temperature to 350 degrees and continue cooking for an additional 30 minutes or until the internal temperature reaches 150 degrees. Transfer to a cutting board and allow pork to rest for 15 minutes before carving. Serves 6.
