In a large pot over medium heat, sauté the olive oil, garlic, onion, celery and carrots for 8 to 10 minutes, stirring frequently. Add the chicken broth and fire roasted diced tomatoes and bring to a boil. Reduce heat to low and add the zucchini and green beans. Simmer, partially covered, on low for 45 minutes. Add the spinach, white beans, and seasonings. Continue to simmer for another half hour until heated through. Serve with fresh grated Parmesan cheese.
