Five Cup Fruit Salad

A make-ahead recipe using a savory blend of delicious ingredients!

Salads don’t have to contain green lettuce. Take, for example, this delicious fruit salad recipe called Five cup fruit salad. This tasty dish obviously gets its name from its measurements, ultimately containing five single cups of different ingredients that when combined create a five-cup salad. It’s no wonder this oldie but goodie recipe is still widely enjoyed. Not only is it super quick to prepare and easy to double or triple for a crowd, but it can be served and enjoyed year-round.

This recipe is best when made ahead and covered and refrigerated overnight – just be sure to hold the cherries until the fruit salad is ready to serve!

Five Cup Fruit Salad recipe

Serves 8

Ingredients:

  • 1 cup canned pineapple chunks, drained
  • 1 cup Mandarin oranges, drained
  • 1 cup flaked coconut
  • 1 cup miniature marshmallows
  • 1 cup sour cream
  • Maraschino cherries, halved, as garnish (reserve until serving)  

Directions:

In a large serving bowl, combine the pineapple chunks, Mandarin oranges, flaked coconut, miniature marshmallows, and sour cream. Cover and refrigerate overnight to incorporate flavors. Next day, prior to serving, gently remix and garnish with Maraschino cherries.

Chef’s note: Maraschino cherries frequently use red dye for coloring. Note that it is possible to buy ones with no artificial colors, no red dye, and no preservatives.
