Quesadillas are tasty tortillas that are stuffed with cheese, meats, or other fillings and they are generally cooked on a griddle or stove. The dish has its origins in colonial Mexico. It is traditionally made with corn tortillas, though recipes such as this have been modified over time to include flour tortillas. A full quesadilla is made with two tortillas, whereas a half is folded. Here is an easy way to make two full quesadillas for a quick lunch or dinner.

In a cast iron skillet or non-stick frying pan, brush a tiny amount of canola oil on the skillet surface and heat on medium heat. To make one quesadilla at a time, lay the tortilla flat in the pan. While working quickly, brush some fire roasted salsa onto the tortilla. Top with half the cheese and a second tortilla to essentially make a tortilla sandwich. Cook on one side for about two minutes until golden, then flip with a spatula and cook the other side. Remove from pan. Repeat process to make the second quesadilla. Slice quesadillas into wedges with a pizza cutter and serve with remaining salsa, a heaping of sour cream, and sliced avocado.

Tip: You may also add other fillings such as sliced black olives, fresh tomato slices, peppers and onions, cooked meats, chopped cilantro, etc.
