Best Father’s Day Chicken Kebabs

This recipe is ideal for awesome Dads who love chicken, peanut butter, grilling & chilling!

Here’s our recipe for the best Father’s Day chicken kebabs:

Peanut Ginger Chicken Kebabs

Serves 4

Ingredients:

Directions:

In a small bowl, gradually stir the hot water into the peanut butter until well mixed. Stir in the chili sauce, soy sauce, oil, vinegar, garlic, ginger and crushed red pepper. Put the chicken pieces in a large resealable plastic zip bag. Pour the marinade over the chicken pieces. Seal and refrigerate for 8 to 12 hours. Remove chicken from marinade. Thread chicken evenly on skewers. (Before using wooden skewers, always soak the wood first for at least 15 minutes to prevent burning.) Discard leftover marinade. Prepare grill by oiling your grate well before the fire is lit. (Hint: Always follow grill manufacturer instructions. Note that most recommend using canola or peanut oil to coat grill.)  Heat the grill to medium-high. Once the grill is hot, put chicken kebabs on the grill. Rotate and grill meat until golden on each side and meat is cooked through, about 15 minutes total. Use a meat thermometer to test the doneness of several meat pieces. The Internal temperature of thoroughly cooked chicken should read 165° F. Once done, transfer cooked hot kebabs to a clean platter, and loosely tent with foil for about 5 minutes before serving. Grill tips:

Chicken, particularly this recipe due to the marinade, must be watched carefully to avoid burning/flareups. Another important reason to man the grill is to rotate the kabob when the meat is cooked. (Do not over-rotate or kebabs will stick to grill.) Chicken must always be cooked entirely through to be safe to eat.  However, one must avoid overcooking that can lead to tough and dry meat.
