Creamy Artichoke Chicken


Serves 4

• 4 boneless skinless chicken breasts
• 1 (15 oz.) can artichoke hearts in oil or water, drained and chopped (do not use pickled/marinated artichokes)
• ¾ cup grated Parmesan cheese
• ¾ cup mayonnaise
• ½ tsp. garlic powder
• ¼ tsp. black pepper

Preheat oven to 375˚F. Meanwhile place the boneless chicken breasts in a greased 8-inch baking dish. Add the remaining ingredients to a bowl and mix to combine. Cover the chicken with the mixture. Bake, uncovered, for approximately 30 to 40 minutes, until the chicken is fully cooked.

*Cooking times may vary depending upon the thickness of the chicken breasts. Internal temperatures must be a minimum of 165 ˚F for safety.

Fun Fact:
In Italy, artichoke hearts in Italian olive oil are used to make ‘Four Seasons’ pizza to represent each season.
