Hamburger Barley Soup

2 lb. lean ground beef

7 cups water

1 – 16 oz. can diced tomatoes

¾ cup tomato juice

½ lb. green beans – cut in 1 inch pieces

1 cup diced celery

1 cup chopped celery greens

1 bay leaf

2 tsp. minced garlic

2 Tbls. soy sauce

½ tsp. paprika

½ tsp. thyme

½ cup pearl barley

salt & pepper to taste

1 cup diced carrots

1 cup diced potatoes


In a large pot, brown ground beef, drain. Stir in all remaining ingredients except the carrots and potatoes. Bring to a boil, reduce heat, cover and simmer for 1 hour. Add the carrots. Cook for 10 minutes. Add the potatoes. Cook for an additional 30 minutes or until all vegetables are tender. Remove bay leaf before serving.
